The Banquet of Old Times
The Convention, Catering and Special Events Class at the School of Tourism and
Hotel Management at the University of Balamand, organized its Annual Theme Dinner
on Friday May 31, 2013 at 8:00 p.m in front of the Ethnographic museum.
The aim of this project is to provide an opportunity for students to practice
in an authentic event project situation. In addition, the project is large and
complex enough to constitute a true challenge and necessitate efficient management
of available resources in terms of knowledge, manpower and budget.
Every year the event exhibits a specific theme. This year the students
selected the Lebanese traditions theme and the title of the event was “The Banquet
of Old Times” which is so-called after the book that was published by the School.
Managers from five-star international hotels, restaurants and different educational
institutions were invited to this occasion.
The banquet constituted of a set of traditional recipes that are simple and
yet creative and they can easily become a thing of the forgotten past.
In addition, many craftsmen such as Khan Al Saboun, Khan Al Nehaseen, and clay
sculptor participated in the event to treasure and promote the authentic Lebanese
culture epitomized by our ancestors.
The event was very successful and what really exceeded the guests’ expectations
were the “daa” ice cream exhibited by Abdel Rahman Hallab, the “tannour” and
the traditional roasting of lamb on open fire.
