Viva Vegas

The School of Tourism and Hotel Management (THM) at the University of Balamand has a nourishing and advanced curriculum with courses that include material that tests the knowledge of the students and prepares them to be real future hoteliers. The Convention, Catering, and Special Events course exams the students’ knowledge in organizing and executing an event starting with the planning process moving to the preparation stage and then the implementation and servicing stage of the chosen theme. This event is considered for the School an integrative experiental learning project that links many knowledge and skills acquired from disciplines or courses achieved in the 3-year program to create a valuable and richer learning experience. Students will be able to assess their knowledge in management, marketing, leadership, cost control, budgeting, service management and etiquette … along with other aspects of the industry’s fields by producing a themed event of their choice. This year’s 2014 Convention, Catering and Special Events class chose to bring Vegas to Balamand by creating an event called “Viva Vegas”.

Like every year, many professionals from the hospitality and tourism industry are invited to the theme dinner where they come and enjoy the whole authentic experience. The students first divided their tasks by electing a General Manager for the event from among them. Afterwards, they were divided into groups and each group was responsible for a specific task which was required for the success of the event. For instance a team was in charge of menu formulation, food production and cooking along with the faculty chefs and the food production course instructor they created a buffet menu of a variety of salads, appetizers, main courses, breads, and desserts. Another team was in charge of the bar and they created a beverage menu including the welcome drinks and alcoholic and nonalcoholic beverages offered during the different menu courses. 

 In addition, a creative team was responsible for the venue decorations, costumes and invitation cards. The team did a great job in changing the THM parking lot into an exotic Vegas style and according to the feedback forms distributed to the guests during the event; they were successful at capturing the theme. A fourth team took care of making the event entertaining. They discussed with many entertainment agencies activities that might fit the Viva Vegas theme and among which they selected a fire juggler, a stilt walker, a lady cocktail table, and two walking dealers. They also negotiated with the University of Balamand Music Club “Soundz Good” band to perform live on stage some old Vegas theme songs to fulfil the mission of creating the right ambiance. 

 Also, team five was responsible for all the aspect of food and beverage service during the event. They were teamed up with the students of the course Food Production I and Service to make sure that guests requests are delivered promptly and professionally. A final team of students was in charge of lights and sound which was the most important factor that added a lot of flavor to the theme. The students were really proud of their achievements and success to them was measured by the positive and encouraging written comments they received from the participants wishing them good luck and all the best in the near future. Viva Vegas was a really successful event… Our guests were welcomed with cocktail drinks, escorted to their seats with professional attitude, ate home-made style of food, danced to Vegas songs, and served by students who aim to be future service innovators. The School of Tourism and Hotel Management at the University of Balamand has always something new to offer either to its students or guests.
