Chocolate… from Bean to Bar

Under the title "Chocolate… from Bean to Bar", the School of Tourism and Hotel Management at the University of Balamand hosted on the 9th of December, 2010, the company Valrhona, which is the world leader in "Le Grand Chocolate".
  
Valrhona's master pastry chef, Gianluca Fusto and the Middle East sales manager, Ms. Zeyneb Larabi displayed to the audience a movie about the history of chocolate, cocoa origins, plantation, harvesting, deppodding, fermentation, drying, roasting, crushing, blending, molding, coating and decoration.  In addition, Chef Fusto enlightened the audience on how to taste and appreciate chocolate by defining the different ingredients and aromas. At the end of the session, Chef Gianluca projected his chocolate innovations and creations and gifts from Valrhona were distributed to each student.
