Title: Dairy Consumption Patterns and Perceptions (DCP2): A Regional Study Across the Levant, Gulf, and North African Countries.

Funded by: University of Balamand – Intra-Mural Research Grant (2026–2028)

Brief description of the project:

Milk remains one of the most widely consumed foods globally and plays a critical role in human nutrition; however, consumption patterns are rapidly evolving due to economic pressures, cultural shifts, health perceptions, and the growing availability of dairy alternatives. Despite the importance of dairy products in Middle Eastern and North African diets, comprehensive regional data on milk consumption behaviors remain scarce.

This funded research project aims to address this gap by examining dairy consumption patterns and perceptions across countries in the Levant, Gulf, and North Africa. Using a structured, cross-sectional survey distributed to adult populations across the region, the study investigates what, where, when, why, and how dairy products are consumed, as well as emerging trends toward plant-based alternatives. Particular attention is given to demographic, socioeconomic, and cultural determinants shaping consumer choices.

The significance of this research lies in its direct implications for public health, food security, and the sustainability of the regional dairy sector. By generating comparative, region-specific evidence, the project will support policymakers, nutrition professionals, and industry stakeholders in developing informed dietary guidelines and sustainable dairy strategies.

The project is led by Dr. Mireille Serhan, Professor of Food Engineering and Biotechnology at the University of Balamand, in collaboration with Dr.Hussein Hassan, Professor of Food Science and Technology at the Lebanese American University, whose expertise in food safety and consumer research strengthens the multidisciplinary and regional scope of the study.

Student engagement began with activities fostering belonging and professional identity, including the “Coffee with the Dean” welcoming event and active participation in Open Doors, where students enhanced the visibility of the Nursing Program. Throughout the Fall semester, students led multiple health awareness campaigns, particularly in breast and prostate cancer prevention, conducted on campus and within the community in collaboration with the Barbara Nassar Foundation, local municipalities, and faith-based organizations, reaching an estimated 1,200 participants. These initiatives combined evidence-based education with interactive strategies that promoted early detection and community participation.

Preventive health promotion was further strengthened through BMI screening activities conducted on campus, in schools, and in community settings, as well as diabetes awareness initiatives developed in collaboration with MLCand Ordre de Malte (Khaldieh–Zgharta), which also facilitated access to laboratory tests and dietary consultations for students requiring follow-up care. Students additionally engaged with vulnerable populations through elderly awareness projects and an Elderly Fair at the Karagheusian Center, as well as an awareness initiative addressing child violence and abuseat the Jinishian Center.

In addition, students contributed to campus life and psychosocial well-being through national and social activities, including Independence Day celebrations and end-of-year events that promoted cohesion and student engagement.

Across all activities, students demonstrated excellent organizational skills, teamwork, and accountability, responsibly managing resources and receiving very positive feedback. “Excellence at UOB: Where Hard Work Finds Its Place”

I am Rawaa Chedid. I graduated in 2024 with a Bachelor of Science in Nutritional Sciences, earning High Distinction, from the University of Balamand (UOB), where my passion for nutrition was shaped by an education grounded in critical thinking and academic rigor.
During my undergraduate studies, my professors recognized my research potential and encouraged me to extend my learning beyond the classroom. What began as a course presentation on the applications of artificial intelligence in nutrition evolved into a manuscript prepared for publication, alongside broader research involvement as a part-time research assistant contributing to additional scientific papers. This research journey led to an invitation to return to UOB as a guest speaker in March 2026.
UOB’s supportive and stimulating learning environment consistently pushed me to grow with confidence, contributing to strong performance during my dietetic internship at Saint George Hospital University Medical Center.
I am currently pursuing a master’s degree in public health nutrition at the American University of Beirut, where I continue to excel academically and contribute to undergraduate education as a graduate teaching assistant. Today, whenever my work is recognized and I am asked where I studied, my answer remains the same, spoken with pride and gratitude: I am a graduate of the University of Balamand.

Leading the Way: FHS Students Shine Through Clubs and Campus Initiatives

Students of the Faculty of Health Sciences (FHS) continue to shine as leaders of a diverse range of clubs, whether major-related or focused on artistic, recreational, and humanitarian interests.
The Fall semester was exceptionally active across both campuses, reflecting the strong engagement and resilience of FHS students despite ongoing challenges.

Koura Campus
FHS clubs organized a variety of student-led initiatives and events during the Fall 2025–2026 semester. These activities focused on health awareness, student well-being, social engagement, and professional development, and highlighted the active presence of FHS students on the Koura campus.
Events at the Main Campus included awareness campaigns addressing key public health topics, interactive and educational activities, social gatherings that strengthened student bonding, and initiatives promoting mental health, inclusion, and community engagement. These activities demonstrated students’ commitment to creating a dynamic and supportive campus environment while reinforcing the faculty’s mission of service and leadership.

The FHS Clubs held many awarenesses campaigns at the campus and in the community, the Healthy Minds Club raised awareness on a wide range of topics from domestic violence to autism. The Nursing Student Society has covered the following topics: prostate cancer, healthy lifestyle, while the Medical Lab Club has worked on a humanitarian initiative in raising funds for charity cause during the Christmas season.

Dekwaneh Campus

In parallel, the Dekwaneh Campus witnessed a highly active Fall semester, with 49 events taking place. These included 6 awareness campaigns, 35 celebrations, gatherings, and interactive activities, 3 humanitarian and fundraising initiatives, 4 workshops, and 1 musical performance.
The semester began with the festive Club Fair, which brought together all clubs and societies, alongside a reflective Coffee with the Dean session with Dr. Huda Huijer. FHS clubs also played a significant role in the UOB Open Doors, showcasing both their academic professions and vibrant student life.
Several awareness campaigns stood out for their impact and reach. The Nursing Student Society organized Breast Cancer Awareness campaigns at Chekka Municipality, in collaboration with the Nursing Student Society of Koura Campus, and at St. George Orthodox Church of Broummana, emphasizing early detection and self-examination. FHS students also participated in the Pinky Promise Awareness Campaign, organized by the Barbara Nassar Association at the Forum de Beyrouth.

These initiatives reflected the students’ commitment to public health education and meaningful engagement beyond the classroom.

Through their leadership, creativity, and dedication, and with the continuous support of faculty members serving as Club Advisors, FHS students demonstrated once again their commitment to enriching campus life, promoting community engagement, and making a positive impact both on and off campus. We look forward to an equally dynamic Spring semester. Stay tuned for the exciting initiatives and events our students have in store!

Recruitment Summary Fall 2025-2026

The Faculty of Health Sciences at the University of Balamand is committed to the principles of tolerance and compassion, and is therefore dedicated to graduating health care professionals who are well-rounded, critical thinkers and life-long learners. Hence, the faculty played an important role in the university wide recruitment process.

The committee is multidisciplinary, ensuring representation from various programs within the Faculty of Health Sciences, as well as key administrative and recruitment personnel:

MLS: 3 faculty
Nutrition: 2 Faculty
PDHP: 2 Faculty
Nursing: 1 Faculty
FHS Dean’s office: 1 staff
DOCE department: 1 Faculty
Representation from the recruitment team: 1 staff

The four open doors occurred in the following dates:
Koura Campus: Oct 16 and Oct 17
SEG Campus: Oct 21
DEK Campus: Oct 29, Oct 30 and Oct 31
Akkar Campus: Nov 6 and Nov 7

The faculty utilized various locations and strategies to showcase its programs and student activities:
  • - DEK Campus (Dekwaneh):
    • - Faculty members maintained a physical presence in the Salle polyvalente.
    • - Each department had a dedicated booth set up in front of the FHS building to showcase activities related to their specific programs.
  • - Koura Campus:
    • - All departments ensured a simultaneous physical presence in two separate locations: the glass room and the faculty lobby.
    • - The purpose was to perform activities related to students (likely demonstrations or interactive sessions).
  • - SEG Campus:
    • - FHS represented its programs along with the student clubs. Highlighting clubs is often used to demonstrate the student experience and extracurricular life.
  • - Akkar Open Door:
    • - The Nursing program specifically represented the entire FHS at this event, indicating a targeted presence.
This comprehensive approach ensured that prospective students across different geographical areas and campuses had the opportunity to learn about all FHS departments and program

FHS strategy to be involved in school visits:
  • - Weekly Scheduling: The schedule of school visits is distributed weekly to all Student Recruitment Committee faculty members and department representatives. This ensures timely planning and preparation.
  • - Department representatives are required to indicate their availability, suggesting a flexible and coordinated approach to assigning faculty for each visit.
  • - Total Visits: So far, the FHS has participated in 14 school visits. These visits were distributed between the departments, ensuring that faculty expertise relevant to potential students was present at each event.

Th is approach demonstrates an organized effort to engage directly with prospective students at the high school level, with shared responsibility across the FHS departments.
